Will Rogers said that Fred Harvey kept the west in food and wives. He created his first eating establishments in 1875. Three years later he built the first of the famous Harvey Houses and to what many felt was the settling of American west. Elizabeth Nosek will present the history of these dining establishments and their influence in Colorado dining. Elizabeth Nosek is the Curator of Education and Exhibits at the Colorado Railroad Museum. A museum curator for over 20 years, she has worked in collections, interpretation, education and exhibition at museums around the United States as well as in various time periods. Museums are her lifelong passion and she delights in using objects to connect people with the unique story they have to tell.
